This is the full answer Shah from EA help gave me. Straight from the transcript. “You are welcome. If you apply the Star In Motion Evolution to your 85-rated Debut Icon Totti, and complete all the required objectives, he will be upgraded to an 89-rated Champion Icon. Just make sure: You haven’t already used that Totti in another Evolution. You meet all the Evo requirements before starting. You complete all the Evo objectives to unlock the full upgrade. Once done, you’ll have a legendary version of Totti ready to boss the midfield like it’s 2006 all over again.”

Hey guys, if anyone still cares. I just confirmed what @Frozentiger9 said. I had a chat with EA help and they confirmed that the Evo does in fact not affect the Champion Icon upgrade scheduled for November. So yes indeed, a cheeky little 5*5* SS+ Totti for the lads!
